Easy Fresh Tomato Sauce
A perfect way to use up all the tomatoes at this time of year.
1 T. Olive Oil
3 cloves garlic, minced
3 pounds ripe tomatoes, peeled, seeded and diced
1/8 t. sugar
basil, 2 springs chopped plus 1 T slivered
In a wide non-stick frying pan, heat the oil over medium then add the garlic. cook about a minute and then add the tomatoes, sugar, chopped basil and salt. Bring to a simmer then reduce the heat to medium low and simmer, stirring often until thick. Tomatoes will take at least 20-30 minutes to cook down and longer if they are very juicey. The longer you cook the sauce, the sweeter it will be. At the end, sprinkle in some silvered basil before serving.
I serve it with some little chunks of tomatoes in it but if you like a smoother sauce, you can pulse it in a food processer a few times until desired consistancy. Serve over your favorite pasta.
