Mango, Black Bean and Corn Salsa

This simple simple salsa is great alone with chips or as a topping for grilled chicken or fish! It is adapted from a Weight Watchers recipe.

Mango, Black Bean and Corn Salsa

  • 1 small red onion (or half large)
  • 2 Mangos, diced
  • 1 small or 1/2 large red pepper, seeded and diced
  • 1/2 cup leftover cooked corn (or thawed frozen)
  • 1/2 cup canned black beans, rinsed and drained
  • 2 Tablespoons fresh lime juice

Put diced onion in bowl of ice water and soak while making the salsa. Mix the mango, bell pepper, corn, beans and lime juice in a bowl. Drain and dry the onion before adding. Mix well. Chill until ready to serve.
