Eggnog Quick Bread


2 eggs

1 c. sugar

1 c. dairy eggnog  (not canned)

1/2 c. butter, melted

2 t. rum extract

1 t. vanilla

2 1/4 c all-purpose flour

2 t. baking powder

1/2 t. salt

1/4 t nutmeg


Heat oven to 350.  Grease bottom only of 9 x 5 loaf pan.  Beat eggs in large bowl.  Add sugar, eggnog, margarine, rum extract and vanilla; blend well.  Lightly spoon flour into measuring cup; level off.  Add flour, baking powder, salt and nutmeg, stirring just until dry ingredients are moistened.  Pour into greased pan.  Bake at 350 for 45 to 50 minutes or until toothpick inserted in center comes out clean.  Cool 10 minutes.  Remove from pan.  Cool completely.  Wrap tightly and store in refrigerator.

1 (16-slice) loaf


If desired, recipe can be baked in two 5 3/4 x 3 1/4 inch loaf pans, greased on bottoms only.  Bake at 350 for 35 to 40 min.
